En una entrevista reciente, realizada por la revista espa\u00f1ola Cocina Futuro, Xavier Pellicer menciona que una caracter\u00edstica clave en una dieta ayurv\u00e9dica es la forma de cocinar las legumbres, ya que se consideran una prote\u00edna vegetal, por lo que no se cocinan con prote\u00edna animal. Adem\u00e1s, es esencial remojar adecuadamente las legumbres, as\u00ed como algunos otros trucos de cocina para facilitar su digesti\u00f3n, contribuir a reducir las flatulencias y hacerlas en general menos pesadas y m\u00e1s f\u00e1ciles de hacer digerir.    <\/p>\n<p>Los seis Rasa son esenciales para un equilibrio saludable. Cada sabor est\u00e1 relacionado con un dosha, es decir, una energ\u00eda, y al combinarlos entre s\u00ed completan la esencia y la personalidad de una persona. Un dato curioso del Ayurveda es que siempre hay que empezar una comida con una nota \u00abdulce\u00bb, pues los sabores dulces son grasos, untuosos y refrescantes y ayudan a transmitir calma. As\u00ed que, cuando se tiene hambre, primero hay que empezar con un elemento calmante, que nos permita rebajar la ansiedad y bajar el ritmo. El sabor \u00abdulce\u00bb ayudar\u00e1 a regular nuestros jugos g\u00e1stricos y enzimas, a calmar los nervios y, en consecuencia, a reducir nuestra cantidad de ingesta.      <\/p>\n<p>La versatilidad de las legumbres las convierte en el componente perfecto de la dieta ayurv\u00e9dica, como subraya Xavier Pellicer.
