_module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb][\/et_pb_heading][et_pb_text _builder_version=\u00a0\u00bb4.27.4&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb]<\/p>\n<p>Bien que la seule fa\u00e7on de tester la qualit\u00e9 d&rsquo;une l\u00e9gumineuse soit de la cuisiner, certains signes peuvent nous aider \u00e0 d\u00e9tecter la qualit\u00e9 d&rsquo;une l\u00e9gumineuse :<\/p>\n<p>Lors de la s\u00e9lection des l\u00e9gumes secs, il convient de s&rsquo;assurer qu&rsquo;ils sont propres, qu&rsquo;ils ne contiennent pas de corps \u00e9trangers tels que des pierres, des b\u00e2tons ou de la salet\u00e9, et qu&rsquo;ils ne comportent que peu ou pas de graines endommag\u00e9es, fendues ou d\u00e9pec\u00e9es.<\/p>\n<ul>\n<li>L&rsquo;homog\u00e9n\u00e9it\u00e9 de la taille et de la forme est g\u00e9n\u00e9ralement un signe de qualit\u00e9 de l&rsquo;impulsion.<\/li>\n<li>Les haricots et les lentilles doivent avoir une peau lisse et brillante.<\/li>\n<li>Les peaux rid\u00e9es des haricots et des lentilles ont tendance \u00e0 s&rsquo;ouvrir lorsque la graine est hydrat\u00e9e.<\/li>\n<li>Recherchez des l\u00e9gumes secs aussi frais que possible, de pr\u00e9f\u00e9rence s&rsquo;ils proviennent de la derni\u00e8re r\u00e9colte.<\/li>\n<li>V\u00e9rifiez le pays d&rsquo;origine. Le trempage est une \u00e9tape cruciale car il r\u00e9duit le temps de cuisson. Une grande partie des oligosaccharides, qui peuvent provoquer des flatulences, est \u00e9galement \u00e9limin\u00e9e. Les l\u00e9gumes secs doublent ou triplent de volume, assurez-vous donc qu&rsquo;ils disposent de suffisamment d&rsquo;espace et d&rsquo;eau pour se d\u00e9velopper.   <\/p>\n<p>Id\u00e9alement, faites-les tremper toute une nuit avant de les pr\u00e9parer. Elles doivent \u00eatre laiss\u00e9es dans un endroit froid ou au r\u00e9frig\u00e9rateur, pour \u00e9viter la fermentation. L&rsquo;ajout d&rsquo;une cuill\u00e8re \u00e0 soupe de vinaigre de cidre de pomme \u00e0 l&rsquo;eau de trempage peut favoriser la digestion. Id\u00e9alement, le temps de trempage devrait \u00eatre d&rsquo;un minimum de 4 heures et d&rsquo;un maximum de 12 heures.   <\/p>\n<p>Voici la m\u00e9thode de trempage traditionnelle et deux m\u00e9thodes alternatives pour obtenir des l\u00e9gumes secs propres, bien hydrat\u00e9s et pr\u00eats \u00e0 \u00eatre cuisin\u00e9s.<\/p>\n<p><strong>M\u00e9thode de trempage traditionnelle  <\/strong><\/p>\n<ul>\n<li>Mettez les l\u00e9gumes secs dans une casserole en les recouvrant de 3 fois leur volume d&rsquo;eau.<\/li>\n<li>Laissez-les tremper pendant un minimum de 4 heures et un maximum de 12 heures, dans un endroit frais.<\/li>\n<li>Egouttez les l\u00e9gumes secs et jetez l&rsquo;eau (Note : l&rsquo;eau froide d\u00e9marre le processus de r\u00e9hydratation, mais ne l&rsquo;ach\u00e8ve pas, les haricots seront rid\u00e9s). Pour cuire les l\u00e9gumes secs, il est pr\u00e9f\u00e9rable de commencer avec de l&rsquo;eau froide &#8211; \u00e0 l&rsquo;exception des pois chiches, qui doivent toujours \u00eatre ajout\u00e9s lorsque l&rsquo;eau est en \u00e9bullition &#8211; et apr\u00e8s environ 10-15 min, lorsqu&rsquo;ils ont commenc\u00e9 \u00e0 bouillir, il est important d&rsquo;enlever l&rsquo;\u00e9cume qui se forme car elle contient des impuret\u00e9s et des antinutriments. <\/p>\n<p>Il est important de ne pas trop cuire les l\u00e9gumes secs, car ils perdront leurs nutriments, leur texture, leur couleur et leur saveur. Si vous travaillez avec des l\u00e9gumes secs difficiles \u00e0 cuire, l&rsquo;ajout de bicarbonate \u00e0 l&rsquo;eau de trempage ou \u00e0 l&rsquo;eau de cuisson rendra les l\u00e9gumes secs plus tendres, mais vous d\u00e9truirez \u00e9galement une partie de la thiamine, ce qui rendra l&rsquo;assimilation des acides amin\u00e9s plus difficile. <\/p>\n<p>Si vous d\u00e9cidez d&rsquo;utiliser du bicarbonate, il est pr\u00e9f\u00e9rable d&rsquo;utiliser les proportions suivantes :<\/p>\n<p>1g. de bicarbonate x 1L d&rsquo;eau x 200gr de l\u00e9gumineuses s\u00e8ches. <\/p>\n<p>Legumechef recommande de cuire les l\u00e9gumes secs seuls, ce qui permet d&rsquo;optimiser les temps de cuisson et de rendre le lot cuit plus polyvalent car il peut \u00eatre utilis\u00e9 pour diff\u00e9rentes recettes (rago\u00fbts, hamburgers, salades&#8230;).<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=\u00a0\u00bb1_4&Prime;
