Pr\u00e9chauffez le four \u00e0 180\u00b0C. Placez les haricots noirs secs et rinc\u00e9s sur une plaque \u00e0 p\u00e2tisserie recouverte de papier sulfuris\u00e9. Faites cuire pendant 15 minutes ou jusqu&rsquo;\u00e0 ce que les haricots semblent craquel\u00e9s et secs au toucher. Retirez les haricots du four et augmentez la temp\u00e9rature du four \u00e0 190\u00b0C.     <\/li>\n<li>Faites chauffer une grande po\u00eale \u00e0 feu moyen. Une fois chaude, ajoutez l&rsquo;huile, l&rsquo;ail et l&rsquo;\u00e9chalote. Faites sauter pendant 2 \u00e0 3 minutes, ou jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient l\u00e9g\u00e8rement ramollis, en remuant fr\u00e9quemment. Retirez du feu.   <\/li>\n<li>Ajoutez les haricots noirs dans un robot culinaire avec l&rsquo;ail, l&rsquo;\u00e9chalote, le sel de mer, l&rsquo;origan, le piment rouge en flocons et le fenouil (facultatif) et mixez jusqu&rsquo;\u00e0 obtention d&rsquo;un m\u00e9lange homog\u00e8ne (ne m\u00e9langez pas trop). Ajoutez ensuite le quinoa cuit, le parmesan, le concentr\u00e9 de tomates, le basilic ou le persil frais et la sauce soja. M\u00e9langez par impulsions jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;une p\u00e2te textur\u00e9e (vous ne cherchez pas \u00e0 obtenir une pur\u00e9e).  <\/li>\n<li>Go\u00fbtez et ajustez le go\u00fbt si n\u00e9cessaire.<\/li>\n<li>Si le m\u00e9lange est trop humide, ajoutez du parmesan et m\u00e9langez par impulsions.<\/li>\n<li>Pr\u00e9lever 1 1\/2 cuill\u00e8re \u00e0 soupe (\u00e0 l&rsquo;aide de cette cuill\u00e8re ou d&rsquo;une cuill\u00e8re \u00e0 soupe) et former d\u00e9licatement de petites boules \u00e0 l&rsquo;aide de vos mains.
