Metti le melanzane a cubetti in una ciotola capiente, irrora con un po&#8217; di olio d&#8217;oliva (circa 3 cucchiai) e condisci con sale e pepe. Mescolale bene e disponile su una teglia foderata, usandone due se necessario per assicurarti che siano disposte in un unico strato. Inforna per 30-35 minuti fino a quando non saranno dorate.   <\/li>\n<li>Nel frattempo, scalda un po&#8217; di olio d&#8217;oliva in una padella dai bordi larghi. Aggiungi le cipolle e l&#8217;aglio e falli soffriggere a fuoco dolce per circa 5 minuti, facendo attenzione che non si brucino o cambino colore. <\/li>\n<li>Poi aggiungi i funghi e continua a cuocere finch\u00e9 non iniziano ad ammorbidirsi.<\/li>\n<li>Quando le melanzane sono pronte, aggiungile al composto di funghi. Poi aggiungi i pomodori in scatola, i pomodori secchi e la passata di pomodoro. Mescola delicatamente per amalgamare il tutto, facendo attenzione a non rompere le melanzane.  <\/li>\n<li>Condisci con sale e pepe e aggiungi le erbe aromatiche. Infine, mescola delicatamente le lenticchie verdi con un filo d&#8217;olio d&#8217;oliva finch\u00e9 non saranno ben combinate.
