Lentil stew

Ingredients:

Lentil stew

  • 200 g pardina lentils
  • 350 g crushed tomatoes
  • 1 teaspoon tomato paste
  • 2 cloves garlic
  • 1 onion
  • 1 stalk of celery
  • 3 carrots
  • 2 small potatoes
  • 1.5 L water
  • 1 tablespoon of paprika
  • Salt to taste
  1. Soak the lentils the night before.
  2. The next day, heat the olive oil in a saucepan.
  3. Remove the skin from the garlic, crush it and add it to the pan.
  4. Wash and cut the onion, celery and two carrots into small pieces and add them to the pan. Saute for 5 minutes.
  5. Peel the potatoes, cut them into pieces and add them to the pan along with the paprika. Cook for another two minutes.
  6. Now add the crushed tomatoes and half the water, cover and cook for 20 minutes.
  7. Mash the vegetables until you get a creamy mixture and add the diced carrot, salt, lentils and the rest of the water.
  8. Cover and cook for 1.5 hours in a casserole dish or for 15 minutes on an express stove.
  9. Serve warm or store in the refrigerator to enjoy when you feel like it ☺️
