GREEN LENTIL PESTO  

Ingredients:

GREEN LENTIL PESTO

  • 100 gr split green lentils
  • 1 bunch basil
  • 50 gr olive oil
  • ground pepper
  • 100 gr pine nuts (or other dried fruit,)
  • grated cheese or brewer’s yeast (veg.)
  1. Cook the lentils according to the time indicated on the package, then drain them well but do not cool them.
  2. Mix them in a blender with the rest of the ingredients and blend until you get a creamy consistency. You can add a little of the cooking water of the pulses to bind the sauce.
  3. Then just mix it with your favorite pasta and enjoy !
