Apple cake with chickpea and rice flour
Ingredients:
Apple cake with chickpea and rice flour
- 100 g chickpea flour
- 100 g rice flour
- 3 large eggs
- 100 ml milk
- 50 g butter at room temperature
- 150 g brown sugar
- 10 g baking powder
- ½ tsp ground cinnamon
- ¼ tsp ginger
- 1 apple (sliced)
- Sift the flours with the yeast and spices, set aside. Pre-heat the oven to 170ºC. Grease a rectangular mold with butter and flour.
- Beat the eggs with the sugar until they are fluffy & creamy. Then add the milk and the softened butter. Mix well and incorporate the flour mixture. Whisk until a everything is perfectly blended.
- Pour the mixture into the mold and place the apple slices on top.
- Bake for 40 minutes or until a toothpick comes out clean. Remove from the oven, cool and unmold.
