GLUTEN-FREE CHICKPEA AND BLUEBERRY PANCAKES
Ingredients:
GLUTEN-FREE CHICKPEA AND BLUEBERRY PANCAKES
- 1 1/2 cups chickpea flour
- 1 1/2 cups of water or almond milk
- 3 tablespoons coconut sugar
- 3 tablespoons of flax flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 2 cups of blueberries
- 1 tablespoon of coconut oil or butter
- In a large bowl mix all the dry ingredients.
- Slowly add water or almond milk, until pancake batter is thick.
- If the batter is too thick, add more water or almond milk.
- Heat a griddle over medium heat and grease with coconut oil or butter.
- Using a 1/3 cup measuring spoon, add batter to skillet.
- Top the pancake with some blueberries.
- Once small bubbles start to form, after about 3-4 minutes, flip the pancakes.
- Cook a few minutes on the other side.
- Repeat with the rest of the pancake batter.
- Serve the pancakes with blueberries and maple syrup.
