Pea Falafel
Ingredients:
Pea falafel
- – 1 cup dried green peas (150 g)
- – 1 clove garlic
- – 1 small red onion
- – 1 carrot
- – 1 tablespoon chopped fresh parsley
- – 1 tablespoon chopped fresh coriander
- – 1/4 tsp cumin powder
- – 1/2 tsp salt
- – 2 tbsp breadcrumbs
- Soak the dried peas for 24 hours.
- Drain the peas and toss them into the bowl of a food processor along with the rest of the ingredients except the breadcrumbs. Blend until a homogeneous mixture is obtained.
- Pour the mixture into a bowl and mix with the breadcrumbs. Make small balls about the size of a ping-pong ball.
- You can bake them in two ways: in the oven at 180°C for 30 minutes, or in a frying pan with oil until golden brown.
- Eat with a yogurt sauce and a nice salad, or however you like!
