One pot chickpea curry
- 2 TB Oil
- Red opnion
- 3 garlic
- Ginger
- Paprkika
- Cayenne
- Coriander
- Tomato puree
- 400 g Chickpeas
- 250 g Vegetable broth
- 400 g Coconut milk
- 100 g Ground almonds
- 2 Handfuls of spinach
- Fry for a few mins
- Add chickpeas and veg stock
- Add coconut milk
- Ground almonds or oats
- Add spinach at the end and salt and lime
