PITA WITH TZATZIKI AND SPICY CHICKPEAS
Ingredients:
PITA WITH TZATZIKI AND SPICY CHICKPEAS
- 200 gr cooked chickpeas
- ½ cucumber
- ½ tomato
- ¼ red onion
- fresh parsley
- fresh mint
- 1 unsweetened soy yogurt
- 2 pita bread
- olive oil
- cumin
- ground pepper.
- Peel, wash and sauté the chickpeas with a little olive oil and the spices. Allow to cool.
- Meanwhile, grate half the cucumber, dry with kitchen paper and mix with the yogurt, pepper, chopped parsley, olive oil and a little lemon juice.
- Cut the tomato into cubes, the rest of the cucumber and the onion into cubes.
- Place a layer of yogurt, then the salad and chickpeas on top.
- Finish with a drizzle of olive oil.
