Banana bread and chickpea flour

Ingredients:

Banana bread and chickpea flour

  • 3 medium ripe bananas (mashed)
  • 3 tablespoons of honey
  • 2 teaspoons of vanilla extract
  • 2 large eggs
  • 2 tablespoons coconut oil (melted and cooled)
  • 1 teaspoon of apple cider vinegar
  • 1 and a half cups chickpea flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of salt

ADDITIONAL OPTIONS:

  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts or walnuts
  • 1 cup of blueberries
  • 1 cup of grated coconut
  1. Preheat the oven to 200 degrees.
  2. Line a loaf pan with parchment paper and spray with nonstick spray.
  3. In a medium bowl, combine the chickpea flour, baking soda, cinnamon, and salt; set aside.
  4. In a large bowl, combine bananas, honey, vanilla extract, eggs, coconut oil, and apple cider vinegar; mix until well combined and creamy.
  5. Add dry ingredients to wet ingredients and mix until just combined.
  6. Add any of the optional add-ons to create your own version of this delicious bread.
  7. We highly recommend nuts and chocolate chips.
  8. Pour batter into prepared pan and smooth top.
  9. Bake for 40-50 minutes or until tester inserted in center comes out clean.
  10. Remove from oven and place on wire rack to cool for 10 minutes, then carefully invert, remove bread from skillet and return to wire rack to cool completely.
