Cod and Chickpea Fritters 

Ingredients:

Cod and Chickpea Fritters

  • 400 g of cooked cod (clean from skin and bones)
  • 400 g of cooked chickpeas
  • 1 egg
  • 1 small onion
  • 1 handful of parsley
  • 1 tsp of pepper
  • 1 tsp of nutmeg
  • 1/2 tsp salt
  • Olive oil
  1. In a food processor, place the onion and parsley and chop.
  2. Add the chickpeas and blend until pureed.
  3. Move to a bowl and reserve.
  4. •Place the cooked cod on a cloth and with the help of the cloth, shred it
  5. Add the shredded cod to the chickpea puree and mix well.
  6. Add the egg and the seasonings and fold in evenly
  7. With the help of two spoons, form into quenelles and place them on a baking tray lined with parchment paper, brush all the fritters with a little olive oil and place in the oven for about 25 minutes at 180°C.
  8. (If you prefer, you can fry them, as you would traditionally).
