Dried split pea guacamole
Ingredients:
Dried split pea guacamole
- 1 cup dried split pea
- 3 cups of water
- Juice of 1 lime
- 2 ripe avocados (halved, pitted)
- 1 clove of minced garlic
- 1 tablespoon diced jalapeño
- 3 tablespoons of chopped red onion
- 3/4 cup freshly chopped cilantro
- salt and black pepper (to taste)
- Chips
- Rinse split peas and place in small saucepan.
- Add water and bring to a boil. Reduce the heat.
- Cover and simmer for 35 minutes. Drain excess water if necessary.
- Transfer split pea to food processor or blender.
- Add the lime juice and puree until creamy.
- Transfer the mixture to a bowl and cool.
- Scoop out the avocado pulp and place in a large bowl.
- Smash the avocados with a fork and add the split pea mixture, garlic, jalapeño, onion, and cilantro.
- Season with salt and black pepper, to taste.
- Serve with chips.
