Lentil salad

Ingredients:

Lentil salad

  • 200 g brown lentils
  • 70 g sweet corn
  • 60 g boiled green beans
  • 200 g small zucchini (washed, sliced and browned with extra virgin olive oil)
  • 50 g fresh chanterelles (boiled in plenty of water with white vinegar and salt)
  • 10 cherry tomatoes
  • 30 g pitted black olives
  • 200 g tasty fresh Asiago cheese
  • 1 green celery stalk
  • 1 endive plant
  • 5 strings of chives cut into small pieces
  • extra virgin olive oil
  • Salt
  • Pepper
  1. Soak the lentils for 4 hours. Drain and wash well. Cook them with a celery stalk for 45 minutes.
  2. Mix the lentils with the other ingredients, season with extra virgin olive oil and serve over the fresh escarole salad.
