Moussaka with lentils

Ingredients:

Moussaka with lentils

  • 1 kg eggplant
  • 500 g cooked brown lentils
  • 50 ml olive oil
  • 200 g onion
  • 1 clove garlic
  • 100 ml tomato puree
  • ½ tsp ground cinnamon
  • 500 mL béchamel
  • 200 g grated emental cheese
  1. Heat the oven to 17ºC. Roast the unpeeled eggplant. When they are roasted, peel them and mash them with a fork, reserve.
  2. In a frying pan, heat the oil, sauté the onion cut into brunoise until it is transparent, add the minced garlic, tomato, cinnamon, and lentils. Stir, season. Cook for about five minutes, stirring constantly to avoid sticking to the bottom of the pan. Reserve.
  3. Prepare a béchamel.
  4. Grease the molds, in the bottom put a layer of eggplant, a layer of lentils, a layer of cheese, another layer of aubergines and cover with the bechamel sauce, cover with grated cheese. Gratin for about 15 minutes, or until the cheese is golden.
  5. Serve.
