NACHOS WITH LENTILS
Ingredients:
NACHOS WITH LENTILS
- 1 cup dried lentils (rinsed)
- 2 cups of water
- lean ground beef
- 1 can of tomato sauce
- 1 teaspoon chili powder
- 1 teaspoon of Tabasco sauce
- 1 cup of water
- salt and freshly ground black pepper (to taste)
- 2 – 3 chopped onions
- 1 ⁄2 cup of chopped ripe olives
- 2 – 3 fresh green chilies (seeded and minced)
- 1 ⁄2 cup of grated cheddar cheese
- 1 ⁄2 cup of grated mozzarella cheese
- Nacho chips
- In a medium saucepan, bring the lentils and 2 cups of water to a boil.
- Reduce heat, cover and simmer 30 minutes, or until lentils are tender. Drain.
- Preheat the oven to 200º.
- In a large skillet, brown the ground beef. Drain off excess fat.
- Add tomato sauce, chili powder, Tabasco, hot sauce, and a cup of water.
- Stir over medium heat until sauce is slightly thick.
- Add the drained lentils. Season with salt and pepper to taste.
- Place in a cake pan or baking dish.
- Top with green onions, olives, green chilies, and shredded cheese.
- Heat in the oven for 10 to 12 minutes.
