Stuffed zucchini with white beans and marinated pork

Ingredients:

Stuffed zucchini with white beans and marinated pork

  • 1 zucchini
  • 50 gr white beans
  • 50 gr marinated pork
  • ½ onion
  • 1 carrot
  • Salt
  • Spices to taste
  • Extra virgin olive oil
  1. Wash the vegetables, cut the zucchini in half and make a few cuts.
  2. Wash the canned white beans.
  3. Use any protein we have at home (meat, fish, eggs, heura …)
  4. Cook the vegetables and microwave for 17 minutes or in the oven for 30 minutes (Cover the container to
  5. Empty the zucchini, chop the filling with the rest of the vegetables and mix.
  6. Fill and cover with grated cheese.
  7. Gratin in the microwave or oven

Tips

  • If we cook the vegetables in the oven, add a little water.
  • It can be accompanied by any (romescosauce, barbecue, alioli)
