AVOCADO CANNELLONI STUFFED WITH BEANS AND ROMESCO MAYO

Ingredients:

AVOCADO CANNELLON STUFFED WITH BEANS AND ROMESCO MAYO

Beans:

  • 200 g cooked beans
  • 20 ml apple cider vinegar
  • 15 ml lemon juice
  • 30 ml olive oil
  • 2 g salt
  • 1 g pepper
  • 10 g red onion
  • 25 g red pepper
  • 20 g green pepper
  • 20 g cucumber

The mayo of romesco:

  • 25 ml soy milk
  • 40 ml mild olive oil
  • 5 ml lemon juice
  • 20 g romesco
  • c / s salt and pepper

2 large avocados

Beans:

  1. Mix the beans with all the brunoise vegetables, the liquids, the salt and the pepper. Soak in the vacuum machine or let it rest for 12 hours in the fridge so that the beans absorb the flavor well.

The mayo of romesco:

  1. Assemble a mayonnaise with the soy milk and oil. Add the lemon juice so that it sets well. Finish by crushing the mayonnaise well with the romesco sauce and refining the salt and pepper.

Presentation:

  1. Lightly grease a greaseproof paper with a little oil and arrange a few thin slices of avocado superimposed. Introduce the beans as filling and roll the avocado with the help of the greaseproof paper.

Serve on the plate with a few points of romesco mayonnaise and a few sprouts.
