BEAN AND SPINACH TART

Ingredients:

BEAN AND SPINACH TART

  • 300 g cooked rice beans
  • 200 g spinach
  • 2 eggs
  • 100 g grated cheese
  • 200 ml liquid cream
  • 1 small zucchini (thinly sliced)
  • Salt
  • nutmeg
  • 250 g puff pastry
  1. Pre-heat the oven to 170ºC.
  2. Grease a baking dish. Cover it with the puff pastry.
  3. Make a puree with the beans, spinach, cream and eggs, add salt and nutmeg.
  4. Pour the purée into the mold lined with the puff pastry. Cover with the zucchini slices and sprinkle with the grated cheese. Bake for about 40 minutes, until the cheese is golden.
  5. Remove from the oven and serve.
