Our MasterClass

The usapulseseu.org masterclass, is a two-hour session including theory and practice, designed for culinary students, nutritionists, and restaurant and catering chefs. They are taught the multiple innovative possibilities offered by legumes.

usapulseseu.org has put together a recipe book with the recipes which chef Alex Pirla (Prabhu Sukh) and his team have developed over the years. The recipes are designed to use pulses in modern, creative and fun ways, and at the same time replacing ingredients such as wheat flour and animal protein. For example: vegan brownies made with black beans, with all the flavor and texture of a brownie prepared in the conventional way.

This course is for institutional kitchens, restaurants, hotels, caterings, as well as nutritionists, to help these professionals to brush up on their pulse cooking techniques, and give them insight into how to optimize the use of pulses as an ingredient in their menus.

 

Our team goes to their establishment in person (or virtually if preferred) to carry out a 2-part course – theoretical introduction about the importance of pulses, followed by a hands-on workshop tailormade to the necessities of the target group:
