Vegetable esqueixada with white beans
- 50 gr white beans
- 5 gr black Garlic
- 20 gr pickled lemon
- 5 gr Almond
- 2 gr Ghoa Cress
- 2 gr Basil Cress
- 2 gr Shiso Green
- Peel the black garlic, emulsify with oil, making a black garlic paste and reserve.
- Wash and cut the lemon with mandolin or cut cold cuts into slices, pickle the lemon with sugar, leave two days.
- Mix with your hands, the white beans, the black garlic paste, sliced marcona almonds, chopped Basil Cress, then add slices of pickled lemon, salt, pepper.Plate and finish off with different cress
