Warm red pepper and chickpea salad

Ingredients:

Warm red pepper and chickpea salad

  • 3 roasted red peppers
  • 1 roasted eggplant
  • 200 g cooked chickpeas
  • 25 ml olive oil
  • 1 tsp ground cumin
  • 1 lemon juice
  • Salt
  1. Peel the peppers and cut them into strips. Peel the eggplant, cut it into cubes.
  2. In a salad bowl put the chickpeas, roasted pepper and aubergine, add the lemon juice, ground cumin, olive oil and salt. Mix well. Serve warm.
