Ingredients:

White bean, chai and white chocolate cookies

Chai mix:

  • 1 tsp cardamom powder
  • 2 tsp cinnamon powder
  • 1 tsp ginger powder
  • 1 tsp nutmeg powder
  • 1 pinch of black pepper

Cookies:

  • 400 g white beans (pureed)
  • 55 g butter
  • 50 g oat flakes
  • 50 g sugar
  • 60 ml agave syrup
  • 1 g salt
  • 1 tsp baking soda
  • 1 tsp cider vinegar
  • 130 g white chocolate in pieces
  • 1 teaspoon of Chai
  1. Preheat the oven to 170 ° C.
  2. Heat the butter in a pan until completely melted.
  3. Let It heat until it forms a foam and gains a golden color.
  4. Transfer the melted butter into a bowl.
  5. In a kitchen processor, add all ingredients with the exception of chocolate and blend everything until creamy. Incorporate the pieces of chocolate, reserving a little to place on top of the cookie dough.
  6. Place a sheet of parchment paper on an baking tray.
  7. Using an ice cream scoop, scoop out balls of cookie dough and place on the baking tray, cover with the reserved chocolate pieces.
  8. Bake for 20 minutes.
