Chickpea flour and oatmeal cookies, filled with peanut butter
Ingredients:
Chickpea flour and oatmeal cookies, filled with peanut butter
- 150 g chickpea flour
- 200 g rolled oats
- 150 g sugar
- 100 g butter
- 1 egg
- 1 tsp cinnamon
- 1 tsp bicarbonate
- pinch of salt
Filling
- 50 g peanut butter
- 100 g cream cheese
- Preheat the oven to 180ºC. Cover a cookie sheet with parchment paper.
- Sift the chickpea flour with the cinnamon, baking soda and salt. Reserve
- Beat the butter with the sugar until you get a smooth whitish cream. Add the egg, beat. Add the chickpea flour, cinnamon and baking soda. Mix well. Finally add the oats and stir well until well incorporated.
- In the prepared cookie tray, add spoonfuls of dough, shape them by hand so that they are all the same. Bake for 15 minutes, until the cookies are golden brown. Remove from the oven and cool.
Filling
- In a bowl, mix the peanut butter with the cream cheese. When the cookies are cold spread the peanut butter mixture on a cookie and put another on top. Serve.
