Greek Chickpea Salad 

Ingredients:

Greek Chickpea Salad

  • 400 g cooked chickpeas
  • 1 red onion
  • 1 medium cucumber
  • 200 g of cherry tomato
  • 200 g of feta cheese
  • 1 small red pepper
  • 1 small green pepper
  • 3 tablespoons of olive tapenade (or crushed olives)
  • Olive oil
  • Fresh basil
  • Cut the peppers (discard the seeds and white parts and cut into cubes)
  • Cut the cucumber in half (discard the seeds and cut into pieces)
  • Peel the onion and slice with a mandolin.
  • Cut the cherry tomatoes in half
  • Crumble the feta cheese.
  1. In a bowl, place the chickpeas, cucumbers, peppers, onion and cherry tomatoes and mix well.
  2. Add the feta cheese and mix.
  3. In a separate bowl, place the crushed olives, add the oil and mix well.
  4. Add the olives with the oil to the salad and toss.
  5. Finish with some fresh basil leaves
