White bean cookies with peanut butter and chocolate
Ingredients:
White bean cookies with peanut butter and chocolate
- 220 g cooked white beans
- 100 g whole wheat flour
- 3 tablespoons peanut butter
- 50 ml coconut oil
- 150 ml honey
- 100 g chopped walnuts
- Topping:
- 50 g dark chocolate
- Preheat the oven to 180C.
- In a food processor place the beans, flour, peanut butter, coconut oil and honey and grind well until it forms a paste.
- Add the chopped walnuts and mix together.
- Line a baking tray with baking paper. With an ice cream scoop, scoop out balls of dough and place them on the tray, leaving some space between them. Flatten them.
- Bake in the oven for 15-18 minutes or until golden brown.
- Meanwhile, melt the chocolate in a bain-marie.
- Remove the cookies from the oven and drizzle with the melted chocolate. Let cool completely before serving.
