Burrito Bowl
Ingredients:
Burrito Bowl
- 5/6 lettuce leaves
- 200 g cherry tomatoes
- 400 g cooked black beans
- 450 g chicken breast
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup rice
- 2 cups water
- 1 teaspoon paprika
- ½ teaspoon cumin
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- 1/3 lemon (juice)
- 2 tablespoons olive oil
- Sauce:
- 4 tablespoons natural yogurt
- 1 teaspoon garlic powder
- q.b salt
- 1 tablespoon lemon juice
- 3 stalks of chopped coriander
- Mix the spices in a small bowl with the lemon juice and olive oil, season the chicken breast with the mixture and start grilling the chicken.
- Meanwhile, put the water with the rice in a pot and turn on the heat to cook the rice. When the water has completely evaporated the rice is cooked.
- Separate the lettuce leaves and cut them into pieces. Cut the cherry tomatoes in half and prepare the sauce by mixing all the ingredients.
- Meanwhile, heat up the black beans and slice the chicken breast after grilling.
- Assemble the bowl: some rice, lettuce and cherry tomatoes, black beans and the sliced chicken breast.
